Originally from Kanagawa Prefecture, Machida-Shoten has built a reputation for their Iekei ramen – a ramen dish where noodles are cooked to your specified softness/hardness in a tonkotsu and soya sauce mix broth. Choose from 3 levels of doneness for your noodles.
